Super Easy Chicken & Citrus Lettuce Wrap Recipe

I always find it so hard to find inspiration when I’m trying to come up with healthy lunch recipes. Especially when I only have a half an hour for lunch. These citrus chicken wraps are super easy to make, healthy, and delicious. The balance of salt and sweet from the combination of soy sauce and orange slices.

Chicken & Citrus Lettuce Wraps

Ingredients:

2 chicken breasts

1/4 cup soy sauce, low sodium

2 tbsp hoisin sauce

1 tbsp ground ginger

1 tsp garlic powder

1 tsp onion powder

1 tbsp dried parsley

pepper to taste

1 orange

1 head of romaine, ice burg, or green leaf lettuce

Method:

  1. Prepare the marinade by mixing soy sauce, hoisin sauce, ginger, onion, garlic, and pepper in a large bowl. Place the chicken breasts in the bowl ensuring they are covered in the marinade. Set aside for 15 minutes.

  2. Preheat the oven to 365 F

  3. Once the chicken has marinated, heat a large non stick skillet. Sear chicken, about two minutes on each side. Place on a lined baking sheet and bake for 15 - 20 minutes until there is no pink inside.

  4. While the chicken bakes, prep the lettuce, keeping each leaf whole - make sure there are no tears! Slice each orange wedge into about 3 - 4 piece.

  5. Once chicken is done, slice and divide up into each lettuce leaf. Top with orange and it’s ready to eat!
