#MeatlessMonday: Super Easy Vegetarian Calzone

Every Monday I participate in #MeatlessMonday. It’s a good way to get my veggies in, and to help reduce my meat consumption. A quick and easy recipe I always come back to is Vegetable Calzones. With so few ingredients and very little prep time, this meal is easy to follow, and comes out perfect every time. Plus, it’s perfect for lunch or dinner.

Feel free to substitute the veggies for your favourites.

Vegetable Calzones

Ingredients:

  • 2 sheets puff pastry

  • 1 cup vegan cheese

  • 2 peppers

  • 1 leek

  • 1 cup pizza sauce

  • 1 tbsp Italian seasoning

Method:

  1. Pre-heat your oven to 400 F

  2. Slice peppers into strips, and slice leeks into half-moons

  3. Cut each pastry in half vertically, so you’re left with two rectangles.

  4. One-at-a-time, place leeks, peppers, and Italian seasoning on the lower half of the pastry.

  5. Dollop the pizza sauce over the veggies, then sprinkle the vegan cheese on top.

  6. Fold over the side of the pastry without veggies, and firmly pinch the boarder closed. You can roll the edges towards the centre to seal it more tightly. Repeat with the other 3 puff pastry sheets.

  7. Transfer to parchment paper and bake for 25 minutes or until golden brown.

  8. Serve with a side salad and enjoy!
