Lucky: Hana Road Cookies
This month we’re taking inspiration from Marissa Stapley’s Lucky. There is a pivotal scene in the novel in an ice cream shop, where Lucky lets her guard down and falls for someone. I took my inspiration from the list of ice cream flavours, specifically Hana Road. A twist on Rocky Road, this features Macadamia nuts instead of almonds. Hana Road cookies get their name from Hana Highway a popular tourist destination in Hawaii.
Hana Road Cookie Recipe
Ingredients:
1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
3/4 cup macadamia nuts
1/2 cup semi-sweet chocolate chips
36-50 mini marshmallows
Method:
In a large bowl mix flour, cocoa powder, baking powder and salt.
In a mixing bowl combine butter, white sugar and brown sugar. Cream together until fluffy.
Add the egg and vanilla extract and beat together until incorporated. Scrape down the bowl with a spatula.
On low speed gradually add the flour mixture. Stop once it’s mostly incorporated into the mix. It’s okay to see some flour at this point. Fold in the chocolate chips and macadamia nuts.
Place in the fridge for 30 minutes to an hour.
Preheat oven to 350 F.
Use a cookie scoop to drop dough balls on a baking sheet. Press 3 - 4 mini marshmallows on each dough ball.
Bake for 10 - 13 minutes. Allow the cookies to cool on the sheet for 10 minutes before moving to a cooling rack.
