Such a Fun Age: Strawberry Rhubarb Pie

Confession: I’ve never had strawberry rhubarb pie. I’ve seen it on menus and have definitely seen recipes online, but when it comes to pie, I usually keep it to apple or blueberry. Now pie’s are my favourite dessert, so I’m all for trying new things, I’ve just never had a reason to make strawberry rhubarb pie. Until now that is…

All the plot lines of Such a Fun Age come to a head in this scene. We see the juxtaposition of Alix’s perfectly curated life and her messy past life starting to leak all over Thanksgiving dinner. This is the perfect scene to draw from for this month’s book club.

Due to time constraints, I used bought pastry dough, but if you guys have the time, feel free to use this Canadian Living recipe. (it’s my favourite).

Strawberry Rhubarb Pie Recipe

Ingredients

  • 2 9-inch pie dough rounds

  • 3 cups sliced strawberries

  • 2 1/2 cups sliced rhubarb

  • 1/3 cup brown sugar

  • 1/3 cup white sugar

  • 1/4 cup corn starch

  • 1 tsp salt

  • 1 tsp vanilla extract

  • 1 tbsp lemon juice

  • 1 tbsp butter, cubed

  • 1 egg, beaten

Method:

  1. Preheat oven to 400 F

  2. Slice strawberries and rhubarb and place them a bowl.

  3. Mix in both sugars, corn starch, salt, vanilla extract, and lemon juice.

  4. Place mixture into bottom pie dough, making sure not to include any excess liquid. Dot pieces of butter on top of mixture.

  5. Place pie dough on top and crimp the sides with a fork. Brush lightly with egg wash and slice a X on top for hot air to escape.

  6. Bake in oven for 20 minutes. Lower temperature to 350 F and bake for an additional 30 minutes.

  7. Let cool for approximately 3 hours and then serve with your favourite ice cream.
