My Favourite Summer Salad: Strawberry & Poppyseed Salad Recipe

As you know by now, I love salads. If I could eat salads for breakfast I would (and honestly… I ran out of yogurt once, and just ate leftover panzenella salad at 7 a.m.. No regrets). We’re getting to end of summer, so I can’t let it pass by by without posting my absolute favourite summer salad.

It’s packed with summer fruit - strawberries, blueberries, pineapple, and oranges, the dressing is super light, and when you top it off with grilled chicken it really is like summer in a bowl. .

Strawberry & Poppyseed Salad

Ingredients

  • 1 head of romaine lettuce

  • 1/2 cup fresh blueberries

  • 300 grams canned mandarin oranges

  • 3/4 cup fresh pineapple, cut into small pieces

  • 1 cup strawberries, sliced into small pieces,

  • 1 grilled chicken breast

Dressing:

  • 1/2 cup olive oil

  • 1/4 cup white wine vinegar

  • 1 tbsp orange juice, or juice from canned mandarins

  • 2 tsp poppy seeds

Method

  1. Preheat the oven to 365 F, season chicken with salt and pepper., Bake for about 20 minutes.

  2. Chop rest of the ingredients and combine in a bowl.

  3. Combine olive oil, vinegar, orange juice, and poppyseeds in a bowl and whisk until incorporated.

  4. Once chicken is done in the oven, finish on grill on high heat, for about 3 minutes on each side. Slice chicken.

  5. Dress salad and plate. Top with sliced grilled chicken.
