Marilla of Green Gables: Baking Soda Biscuits

This month I took some inspiration from my recent trip to P.E.I. and chose Marilla of Green Gables by Sarah McCoy. The story is tells of Marilla’s life before she adopted Anne. McCoy does a great job capturing the peripheral characters of LM Montgomery’s Anne of Green Gables. (Rachel Lynde is my favourite).

I will say, that this book is FILLED with baking ideas for this year’s meet. After some thinking and purchasing LM Montgomery’s cook book, I had to choose the simple biscuits that are peppered throughout the book. Baking powder based, these biscuits are so easy to make. They’re really good fresh out of the oven with some raspberry jam.

Baking Powder Biscuits

Ingredients:

  • 2 cups all purpose flour

  • 2 tbsp butter, cold

  • 2 tbsp shortening

  • 4 tsp baking powder

  • 1 tsp salt

  • 3/4 cup milk

Method:

  1. Preheat your oven to 450 F. Sift together the flour, baking powder and salt.

  2. Rub the butter and shortening into the flour mixture using a fork or pastry cutter. Once it resembles the texture of sand, use a fork to mix in the milk.

  3. Roll lightly on a floured surface so that it is about 1 inch thick.

  4. Using a circle cookie cutter around 1 1/2 - 2 inches wide, cut out circles. Place circles on an un-greased pan.

  5. Bake for 12-15 minutes. Serve hot.


    Makes 12 biscuits.
