Ferrero Rocher Cupcakes

Celebrating birthdays always means it’s time to bake some cupcakes and given the current state of the world my best friend and I decided to celebrate his birthday virtually. And it’s not a birthday party without his favourite: Ferrero Rocher Cupcakes!

These Ferrero Rocher cupcakes are so easy to make and tastes just like everyone’s favourite chocolate hazelnut treat.

Easy Ferrero Rocher Cupcake Recipe

Chocolate Cupcake:

1 1/3 cup all purpose flour

1/4 tsp baking soda

2 tsp baking powder

3/4 cup unsweetened cocoa powder

1/4 tsp salt

3 tbsp butter, softened

1 1/2 cups white sugar

2 eggs

3/4 tsp vanilla extract

1 cup milk

Nutella Buttercream:

1/2 cup Nutella

1 cup butter softened

3 1/2 cups icing sugar

1 tbsp vanilla extract

2 tbsp milk

Method:

  1. Preheat the oven to 350 F

  2. Sift the flour, baking powder, baking soda, cocoa, and salt.

  3. Cream together the butter and sugar until fluffy. Add the eggs one at a time, then stir in the vanilla.

  4. Add the flour mixture alternately with the milk and beat well.

  5. Line a muffin tin with paper liners and fill each cup 3/4 full.

  6. Bake for 15 minutes.

  7. While the cupcakes bake, cream together the butter and icing sugar together, being sure to add the icing sugar a 1/2 cup at a time. Alternately add the Nutella 1 tbsp at a time.

  8. Add the vanilla and beat on high for 20 seconds.

  9. Add the milk 1 tbsp at a time until the buttercream reaches a thick consistency. Beat on high for 30 seconds.

  10. Let the cupcakes cool for 15 minutes then pipe the Nutella icing in a swirl. Place one Ferrero Rocher on top and enjoy!
