Easy Citrus & Mint Salad Recipe

Ever since I was little I’ve always been obessed with salads. I love how versatile they are and how much fun it is to create different flavour profiles.

One of my favourite pairings is orange and mint and I thought it would be perfect in a salad. Mixed with some lemon juice, balsamic vinegar and salt and pepper, this salad is refreshing and delicious!

Perfect for lunch, this salad packs tonnes of nutrition. Oranges are a great source of vitamin C, while mint is filled with antioxidants and calcium.

Citrus & Mint Salad

2 cups baby spinach

2 oranges

1 bunch of fresh mint

1 tbsp lemon juice

3 tbsp balsamic vinegar

6 tbsp extra virgin olive oil

  1. Rinse the baby spinach, dry and place in a bowl.

  2. Slice the oranges into wheels, each about 1/2 inch thick. Peel each wheel.

  3. Roughly chop the mint and mix with the baby spinach. Place the orange wheels on top of the salad.

  4. In a small bowl mix lemon juice, balsamic vinegar, olive oil, and salt and pepper to taste.

  5. Mix the vinaigrette with the spinach, mint and oranges until all the spinach is coated.

  6. Serve and enjoy!
