Lessons in Chemistry: Fudge Walnut Brownies
These brownies are super fudge-y and will definitely get you through a bad day. This month we read Lessons in Chemistry a story about Elizabeth Zott, a chemist, who hosts a feminist cooking show in 1960s America. I absolutely adored this book. I loved the growth of Zott’s character and of course her feminist way of thinking.
Super simple to make, these are classic walnut and fudge brownies. And you don’t even have to reserve them for a bad day.
Fudge Walnut Brownies
Ingredients
3/4 cups all-purpose flour
1 cup sugar
3/4 cup unsweetened cocoa powder
1/2 cup packed brown sugar
1/2 tsp baking powder
1/4 tsp salt
4 ounces bittersweet chocolate, chopped and divided
1/3 cup milk
6 tbsp butter
1 tsp vanilla extract
2 large eggs
1/2 cup chopped walnuts, divided.
Method:
Preheat your oven to 350 F. And grease 9 inch square baking dish with cooking spray.
Combine flour, cocoa powder, sugars, baking powder and salt in a bowl. Set aside.
Place half the chocolate and milk in a small saucepan on low heat. Melt, and then add butter. Continue cooking over low heat, stirring, until the butter and chocolate have completely melted. Remove the pan from heat and stir in vanilla.
Pour the melted chocolate mixture into the flour mixture and stir until slightly combined. Add the eggs, remaining chocolate, and half of the walnuts into the flour mixture. Stir to combine.
Pour the batter into the pan, and sprinkle with remaining walnuts.
Bake for 30 - 35 minutes. Let cool before serving.
