Babel: Authentic British Scones
Babel is a thrilling story from start to finish. I got so caught up in the story that I forgot to pay attention to the food! Nonetheless, I did some re-reading and I found the perfect recipe - English scones! It’s such a poignant part of the novel when Robin receives a care package from Mrs. Piper and their bond over the baked good. With all the violence in the book, I thought it was fitting that we focus on happier times for our character, and make authentic British scones.
Authentic British Scone Recipe
Ingredients:
2 1/2 cups all-purpose flour
1/4 tsp salt
3 1/2 tsp baking powder
6 tbsp unsalted butter, cold
3/4 cup milk
1 tsp lemon juice
1 tsp vanilla extract
1 egg, beaten
Method:
Preheat oven to 400 F.
Combine flour, salt, baking powder, and sugar in a large bowl.
Cut the cold butter into small cubes, and add to the flour mixture. Using a pastry cutter or two knives, cut the butter into the flour mixture until it resembles fine crumbs.
Add the milk, lemon juice, and vanilla extract to the flour and butter mixture. Quickly combine with a fork or wooden spoon.
Place the dough onto a lightly floured surface and knead the dough a couple of times. Be sure not to overwork the dough.
Using your hands, pat down the dough so that it is about 1 1/2 inches in thickness.
Use a 2-3 inch round cookie cutter to cut out the scones. Place the scones on a baking sheet lined with parchment paper.
Brush the tops of the scones with the beaten egg, and bake for 10 -15 minutes or until the tops are slightly golden brown.
Serve with jam or clotted cream.
