Asparagus & Radish Salad

Spring is in the air so that means I get to get creative with salads again! I wanted something colourful, crisp, and flavourful, my mind went immediately to asparagus and radish. I added some tomatoes and a lemon vinaigrette to add some acidity to the dish. I hope you enjoy it as much as I did.

Asparagus & Radish Salad

Ingredients:

2 bunches of asparagus

2 cup cherry tomatoes, halved

1 bunch of radishes, thinly sliced

Fresh pecorino cheese, grated

Lemon Vinaigrette:

3 tbsp lemon juice

1/4 cup olive oil

2 tbsp apple cider vinegar

Method:

  1. Preheat oven to 425 F. Trim asparagus and place on baking sheet.

  2. Drizzle olive oil and salt and pepper and roast in oven for 15 minutes.

  3. While the asparagus roasts, half cherry tomatoes and thinly slice the radishes.

  4. In a small bowl whisk lemon juice, olive oil, and apple cider vinegar until emulsified. Add salt and pepper to taste.

  5. When the asparagus is done, cut in half and place it in a large bowl with tomatoes and radishes. Coat ingredients in the lemon vinaigrette.

  6. Plate and grate pecorino cheese on top.
