Anxious People: Tangy Lime Sweet Bread Recipe

Limes seemed to be such a popular adornment at apartment viewings that it’s tempting to think that if real estate agents were banned, the surface of the earth would become covered with such a thick layer of limes that only young people with very small knives and an inexplicable fondness for Mexican beer would survive. ~ Anxious People

When it comes to coffee breaks, the Swedes don’t mess around. Fika is a way of life in Sweden and it always includes a cup of coffee or tea and something to eat, like sweet bread, sandwiches, or cinnamon rolls. This Fikabröd is the perfect accompaniment to a warm cup of tea and Anxious People.

Fikabröd: Lime Sweet Bread Recipe

Ingredients:

9 g instant yeast

1/2 cup milk, luke warm

400 g bread flour

1/4 tsp salt

80 g white sugar

1/4 tsp salt

1 egg (+ 1 egg for egg wash)

1/2 cup lime juice

115 g sour cream

Glaze:

2 tbsp lime juice

1/2 cup icing sugar

Method:

  1. Combine yeast and warm milk in a measure cup. Rest for 10 minutes.

  2. While the yeast rests, combine bread flour, sugar, and salt in a bowl. Make a well.

  3. In the centre of the well, pour in yeast mixture, egg, lime juice, and sour cream.

  4. Combine until dough is slightly tacky - add flour until you get this consistency.

  5. Knead for about 5 minutes. Divide dough until 8 uniform balls and place in greased baking tin.

  6. Cover dough with plastic wrap, and a tea towel. Let rise for 30 minutes or until double in size. Preheat the oven to 400 F.

  7. Brush egg wash over the tops of the bread. Bake in oven for about 20 -25 minutes or until golden brown.

  8. While the bread is baking combine icing sugar and lime juice and whisk until you get a glaze.

  9. Once the bread is out of the oven and slightly cooled, pour glaze over the bread or drizzle with a spoon.
